Crockpot Mac & Cheese
8 oz. package elbow macaroni
1 stick margarine or butter
2 1/2 cups shredded cheddar cheese
2 beaten eggs
1 large can evaporated milk (12 fluid oz)
1 1/2 cups milk
salt and pepper to taste
Grease crockpot. Cook macaroni according to directions, drain and place in the crockpot. Add the stick of margarine or butter and 2 cups of the cheese, stir. In a bowl, combine the milk, the beaten eggs, the evaporated milk, salt and pepper. Pour all this over the macaroni, stir. Top with the remaining cheese and cover. Cook on low 3 hours. Stir halfway through the cooking time. This can be prepared ahead of time then cooked 3 hours before serving.
